Chocolate-Peppermint Oreo Cake / Cupcakes
Inspired by my most beloved teenage guilty-pleasure munchies (mint chocolate ice cream covered in crushed Oreo cookies). I’ve been utterly confusing my European oved ones with the chocolate-peppermint combination for a decade and am thrilled to finally be back home where people understand!! So here is my awesome rich chocolate cake base, spruced up with a nice hit of peppermint, then layered with Oreo crumbles and Oreo-Peppermint buttercream! Garnished with Oreo and Peppermints.

Pumpkin Pie Spice Cake / Cupcakes
As you probably guessed, this cake is loaded with real pumpkin and the classic spice-blend we all love this time of year. Filled with my Cashew "Cream Cheese" Buttercream, finished with a slathering of Vanilla Meringue Buttercream, and topped with toasted pecans.

Gingerbread Cake / Cupcakes
A gorgeous cake spiced with plenty of ginger and molasses, brightened up with Orange-Rum Buttercream. The taste of wintertime! For a festive flourish, garnished with candied fresh cranberries, nuts, orange zest and rosemary sprigs (I’ll leave off if requested).

“Mexican Hot Cocoa” Cupcakes
If you’re up for a little thrill with your chocolate? To my standard chocolate base I add a generous hit of cinnamon, and a dash of cayenne pepper! Then top with vanilla buttercream and vegan marshmallow. I bust out some Mexican Vanilla here too for it’s creamy spice notes. These have a wee bit of bite!

Sparkling Wine Cupcakes
Inspired by many New Year’s Eves in the Netherlands, where all over the country folks indulge in “appelflappen” (basically fried apple doughnuts/beignets kinda things) and bubbles as they ring in the New Year!
I make a Apple-Cinnamon cupcake, fill it with a Prosecco (Italian sparkling wine) Cream for a nice boozy touch, then top with Vanilla Buttercream! Also available with Vanilla Cupcakes if cinnamon apple isn’t your thing!

Red Velvet Cake: The light delicate structure of vanilla cake, with a subtle delicious cocoa flavor. Classic red velvet cake is served with cream cheese frosting; I make Cashew “Cream Cheese” Buttercream filling that is sweet with just a little tang.

“Italian Cream Cake” is a variation of my vanilla cake with chopped pecans added throughout, between layers of Coconut-Cashew “cream cheese” Buttercream. (pictured above, right, with textured buttercream finish)

Hummingbird Cake: One of my favorite cakes ever! Hummingbird cake has a similar moist texture and warm spice profile as carrot cake. But instead of carrot we use banana and pineapple, and we use a slightly different spice blend to get a more Caribbean flavor. Plus we fold in a generous amount of toasted chopped pecans, layer with my Cashew "Cream Cheese" filling and finish with Tahitian-Vanilla Meringue Buttercream, candied pecans and dried pineapple slices. (pictured below)

CRUMB CAKES
Vegans! You don’t have to miss out on cake for breakfast! An airy muffin-like cake base, topped with a thick sandy (not crunchy) crumble. Available in two fall-inspired variations. 9 x 9 inch: $33.50
Apple-Cinnamon
Orange-Cardamom-Cranberry (pictured below) - I freshly ground the cardamom seeds to get the most from this super-aromatic spice. That gorgeous warm cinnamony-peppery flavor is rounded out by the brightness of fresh orange and cranberries. So so good!
